Why I Became a Vegetarian?

My boyfriend and I, personally, became vegetarian because we had just moved out and started cooking for ourselves and we realised just how expensive it was to buy meat! Although the original reason for giving up meat was to keep our food shopping bills down, we have since done a bit more research on the impact of meat eating on our environment. It’s safe to say it’s a decision that I stand by and, even though money is no longer quite so tight, (although it’s certainly not flowing!) it’s something we are both going to stick to.

Monday

On Monday, you want something easy, something that doesn’t require too much thinking after the worst day of the week. I like to make something easy like macaroni cheese! It’s up to you which type of macaroni you use, personally I love the curly one but everyone has a preference! You can also make it easier or more complicated based on how you like to cook. I usually use a jar of cheesy sauce because I’m not very good at making sauces but my boyfriend always makes his sauce from scratch and it’s still really quick and easy! We like to make our own garlic bread if we have some spare bread because it’s so easy. You literally just put some bread under the grill to crisp it up then butter it and add a bit of chopped up garlic! It’s so easy and tastes so much better than the frozen ones from the shop. 

Tuesday

On Tuesday I like another really easy meal. I love Pasta bake because you can just shove it in a dish and stick it in the oven for about 40 minutes! If you’re shorter for time you can cook the pasta first and then just grill the top in the oven for a few minutes instead. I also love having a garlic flatbread sometimes because it makes a change from your standard garlic bread baguette and it’s so yummy!

 Wednesday

For Wednesday I have picked a risotto, I love risotto because it’s such a versatile meal. You can literally choose any vegetable as your base. My favourite is mushroom risotto but recently I tried pumpkin risotto and it was insane! If you pick a squash, you just have to boil it in some water and then mash it up to mix in with you rice. I have always made risotto in a saucepan but an Italian lady I know suggested putting it in the oven and it was so good! If you want to add a little something extra to your risotto, try making your own parmesan chips. Just grate up some parmesan and sit it in little piles on a sheet of greaseproof paper, pop it in the oven for a few minutes to melt and then leave it to crisp up before you eat it! 

Thursday

Halloumi and vegetable stir fry is such an easy dinner but it tastes so good! I like to pan fry my Halloumi until it’s a little bit crispy and then throw it in with the noodles and a pack of stir fry vegetables (you can prepare all of your own veg but if you’re going for quick and easy, I would pick up a pack of pre prepared veg!) 

Friday

For Friday I picked homemade soup and bread. I love to make soup because it’s actually really easy. I love pumpkin soup and I also love potato and leek soup. You literally just boil the vegetable you’ve chosen in some vegetable stock and then take it off the heat, add some double cream and seasoning before you blend it all up. I like to push my soup through a sieve before I serve it to make it a little bit more creamy!

Saturday

On Saturday I usually have a little bit more time, because it tends to be a day for cleaning and getting everything in order! I like to cover a couple of potatoes in oil and a bit of salt and shove them in the oven for an hour or so. I’m sure there’s plenty of creative toppings you could come up with but personally I just heat up some beans and grate a bit of cheese over the top. I also like to serve it with some salad but it’s personal choice! 

Sunday

The one thing that its actually pretty difficult to replicate as a vegetarian is a ‘meat and veg’ dinner like a roast. Having said that, Aldi and Lidl do some incredible vegetarian pies and tarts! I personally don’t have the time for a full roast every Sunday so instead I usually just serve the tart with a bit of mash and some gravy. It’s still yummy and if you buy the pre-made mash, which I usually do, it’s so quick!
